Yeah, it's pretty simple, simmer a chicken for an hour (link)


w/ onion and celery, pick chicken, add rest of ingredients simmer for 4 1/2 hours. Don't even really need to chop up a lot of stuff, the chicken and tomatoes and potatoes fall apart on their own w/a little encouragement. So not really a lot of prep time, just setting the timer and do other stuff.

Not sure rotisserie chicken would help, kinda reminds me of some Spanish food sort of a basic taste, we're always trying to zing up the food, fried, hot sauce, smoked etc. and this is just tomato onion chicken just really basic flavors, but munchy.
